Ripen · keep · enjoy
- As it leaves us
- Mature and firm, brown and no longer scurfy, a few days from soft. It gives like a ripe plum and a light scratch shows no green and no milky latex. Unripe sapodilla is gritty and puckering, so wait for it.
- At home
- On the counter until soft, then in the fridge for two or three days.
- Enjoy by
- Within 4 days of delivery
Florida sapodillas bear mainly from late spring into summer, with a few ripening at other times of year.

Spit out the seeds: each has a small hook that can lodge in the throat, and eating several causes stomach pain and vomiting.
Ripe when the brown skin gives like a ripe pear; halve it and scoop out the malty, brown-sugar flesh.
