- As it leaves us
- Mature, green-gold to yellow, thin-skinned and full of juice. Heavy for its size with a thin, smooth skin; a yellow key lime is riper and juicier, not old. A hard, shrivelled or brown-ended lime has dried out.
- At home
- In a bag in the fridge for about a week; out of the fridge they dry within days.

Key limes ripen in South Florida all year, with the main crop in early summer.

Good for
- Immune function — vitamin C
- Iron uptake — a squeeze of lime helps the body absorb iron from beans and greens
- Flavour without salt or sugar
Lime juice left on the skin in strong sun can cause a burn-like rash that blisters and darkens (phytophotodermatitis), so wash your hands after squeezing limes outdoors.
Roll each one hard on the counter before cutting for more juice; a key lime turning yellow is riper, not worse.
