Ripen · keep · enjoy
- As it leaves us
- Mature and firm; avocados ripen only after they are picked. A Florida avocado stays green when it is ripe. Cradle it in your palm: when it yields to gentle pressure all over, it is ready.
- At home
- On the counter for three to eight days until it gives, then in the fridge for two or three days. Do not chill it while hard: below about 13 °C an unripe Florida avocado can turn grey inside.

- Within 4 days of delivery
Florida avocados run from June to March: smooth West Indian types in summer, then larger hybrids such as Choquette and Monroe through the winter.

Ripen it on the counter and refrigerate once it yields; Florida green-skins stay green when ripe, so go by the give, not the colour.
