Ripen · keep · enjoy
- As it leaves us
- Mature, pale yellow-green between the segments, and still firm. It softens all over like a ripe avocado and the skin between the bumps turns creamy yellow. A split near the stem means ripe, not damaged.
- At home
- On the counter until soft, then in the fridge for two or three days. Chilling it while it is still hard stops it ripening.

Florida atemoya ripens from late August to October, with a few into December and January when there is no frost.
