- Young and tender, for eating green before the inside turns fibrous. Firm, heavy for its size and evenly green along the ridges; a light, spongy or yellowing gourd has started turning into a sponge.
- At home
- Loosely wrapped in the warmest drawer of the fridge for three or four days; peel the ridges before cooking.

Taste a thin raw slice first and throw the gourd away if it is bitter: bitter luffa carries cucurbitacins, which cooking does not remove and which cause severe vomiting and diarrhoea.
Peel off the hard ridges, keep the soft skin between them, and cook it briefly; it turns silky in minutes.
