Ripen · keep · enjoy
- As it leaves us
- Turning to light red and still firm, a day or two from full colour. Deep, even red, a slight give at the shoulders and a real tomato smell at the stem scar.
- At home
- On the counter, stem side down, out of the sun. The fridge dulls the flavour, so chill a tomato only once it is fully ripe and needs a few more days, or once it is cut.

Florida tomatoes run October to June.
