- As it leaves us
- Harvested young and tender, pale green with a faint down on the skin. Firm from end to end, with a smooth pale green skin your nail marks easily; a hard skin or big seeds mean it grew too old.
- At home
- Loosely wrapped in the warmest drawer of the fridge for up to a week; once cut, cover the cut end and use it within two days.

South Florida grows Asian gourds through the mild months, when northern farms cannot.

Taste a thin raw slice first and throw the gourd away if it is bitter: bitter gourds of this family carry cucurbitacins, which cooking does not remove and which have caused serious poisoning.
Choose one that is firm with a glossy, unmarked skin; peel it, and cook it into dal or a light curry.
