- As it leaves us
- Young and pale green, the round or pear-shaped lauki. Heavy, firm and evenly pale green, with a skin your nail marks easily; a hard shell, yellowing or big seeds mean it is old. If a slice tastes bitter, do not eat it.
- At home
- Whole, it keeps about a week in the warmest drawer of the fridge; once cut, cover it and use it within two days.

South Florida grows Asian gourds through the mild months, when northern farms cannot.

Taste a thin raw slice first and throw the gourd away if it is bitter: bitter gourds of this family carry cucurbitacins, which cooking does not remove and which have caused serious poisoning.
Choose a heavy, pale-green gourd with fine fuzz still on the skin, a sign it is young; peel before cooking.
