- As it leaves us
- Sprigs cut the day before, leaves dark and glossy. Glossy, firm leaves on the stem with a sharp, resinous smell when crushed; yellowing or dropping leaves were kept too warm or too long.
- At home
- In a sealed bag in the fridge for up to two weeks; or freeze the sprigs, which keep their flavour better than dried leaves.

Curry leaf trees hold their leaves all year in South Florida and flush new growth in the warm months.

Fry them in hot oil for a few seconds, until they crackle, to open the flavour; a sprig, not a hundred grams, is a serving.
